Yes, pumpkin pie needs to be refrigerated. Its filling is eggs and milk, a custard, so a homemade pumpkin pie goes in the fridge within 2 hours of coming out of the oven and keeps there for up to 4 days. The same goes for pecan, sweet potato, custard and cream pies. Apple, cherry and other fruit pies made without eggs or dairy are different: they can sit covered on the counter for up to 2 days. A pumpkin pie that sat out all night should be thrown away.
It is the Tuesday before Thanksgiving. You want the pies done tonight so Thursday is only the turkey. The fridge is already full of the bird, a pan of stuffing and three sticks of butter, and somebody in the family has always left the pumpkin pie on the counter under a tea towel. Can you do that? And how early can each pie be baked?
Here is the answer for each kind of pie, with a baking schedule for Thanksgiving week. The storage times come from university extension services (Maine, Illinois, Iowa State and Ohio State) and the 2-hour rule from the USDA, and each one is linked where it is used.
Why pumpkin pie has to go in the fridge
The pumpkin in the filling should be a pie or sugar pumpkin. A carving pumpkin is edible, but watery and stringy: can you eat a carving pumpkin covers the seeds and the flesh, which belong in soup or bread rather than this pie.
Pumpkin pie filling is eggs, milk or evaporated milk, sugar and pumpkin, baked until it sets. That is a custard. Ohio State University Extension puts it plainly: pumpkin and pecan pie filling are a form of custard and must be kept refrigerated at 41°F or colder. Iowa State’s AnswerLine says all homemade and bakery pumpkin and pecan pies made with fresh ingredients should be refrigerated and not left at room temperature for more than two hours.
The 2 hours is the USDA’s general rule for perishable food. Bacteria multiply fastest between 40°F and 140°F, the range the USDA calls the Danger Zone, and food left in it for more than 2 hours (1 hour above 90°F) should be thrown away. A pie cooling on the counter overnight has spent eight or ten hours there.
Why does Grandma’s pie seem fine on the counter? Often it is fine, the way skipping a seatbelt is usually fine. And the pies you see on an unrefrigerated supermarket shelf are made differently, which is the next section.
Which pies can stay out, and which can’t
| Pie | Counter | Fridge | Freezer |
|---|---|---|---|
| Apple, cherry, berry, peach (fruit and sugar, no eggs) | Up to 2 days, covered | Up to 7 days if it goes straight in; 2 more days after 2 on the counter | Baked: best within 4 months |
| Pumpkin, pecan, sweet potato and other pies made with eggs | 2 hours at most | Up to 4 days | Best within 2 months |
| Cream, custard and chiffon pies (chocolate, coconut, banana cream) | 2 hours at most | Up to 4 days | They do not freeze well |
| Pies made with a sugar substitute | Keep refrigerated | Eat within 2 days | Best within 2 months |
Fridge and freezer times from University of Maine Cooperative Extension, Keeping Pies Safe. The 2-day counter time for fruit pies is the same in University of Illinois Extension’s Do I Need to Refrigerate the Pie? Freezer times are for best quality; food kept frozen at 0°F stays safe longer.
Sugar is what lets a fruit pie sit out. Maine Extension notes that a pie made with a sugar substitute loses that protection, which is why it gets the shortest time of all.
Store-bought pies. A pumpkin pie sold at room temperature in the bakery aisle is made with shelf-stable ingredients and preservatives, so it usually does not need the fridge until it is cut. Read the label. Once it is home and sliced, put it in the fridge; Iowa State says it is never wrong to refrigerate these. A pie bought from a refrigerated case stays refrigerated.
How to cool a pumpkin pie and get it in the fridge
- Cool it on a rack, briefly. Ohio State Extension advises only 30 minutes at room temperature after it comes out of the oven, then letting the fridge finish the job. The filling keeps setting as it chills.
- Refrigerate it uncovered at first. A lid or plastic wrap over a warm pie traps steam, and the water drips back onto the filling and softens the crust. Leave it open on a shelf with some air around it.
- Cover it once it is cold. A few hours later, wrap it loosely in plastic or foil, or put it in a pie carrier, so it does not pick up the smell of the onions on the next shelf.
- On the day, take it out to serve, not to warm up. The 2-hour clock starts when it leaves the fridge. Slice it, set it out with dessert, and put the rest back before the dishes are done.
If the fridge truly has no room, a cooler with ice packs on the back porch works for a night, as long as it stays at 40°F or below. A fridge thermometer in the cooler will tell you. A cold garage is not a fridge: its temperature swings with the weather. When the fridge is full before Thanksgiving covers how to set up the cooler and what else can come out of the fridge to make room.
Pumpkin pie left out overnight? Throw it out. It has been at room temperature far longer than 2 hours, and you can’t tell by looking or smelling whether bacteria have grown. An apple pie left out overnight is fine: fruit pies can stay covered at room temperature for up to 2 days.
When to bake each pie for Thanksgiving
Thanksgiving 2026 is Thursday, November 26. Working back from the 4-day fridge limit for custard pies and the 2-day counter limit for fruit pies:
- Weeks ahead (freezer): pumpkin and pecan pies can be baked, cooled, wrapped and frozen for up to 2 months; baked fruit pies for up to 4. Thaw them in the fridge, not on the counter. Overnight is usually enough for a 9-inch pie. Freezing softens the crust a little, so this is the plan for a host who has to bake six pies, not the way to get the best one.
- Sunday or Monday: make the pie dough and refrigerate it in discs, or freeze it. Dough is the slow part, and it keeps fine.
- Tuesday or Wednesday: bake the pumpkin, pecan and sweet potato pies. Baked Tuesday, they are still inside the 4 days on Thursday and the leftovers are good through Saturday. Baked Wednesday, they last through Sunday.
- Wednesday: bake the apple or cherry pie and leave it covered on the counter. Two days takes it through Friday, and then it goes in the fridge.
- Thursday morning, or the night before: make cream pies and whipped cream. They keep 4 days in the fridge, but whipped toppings and meringue weep and slide after a day or two.
If the pie is going to someone else’s house, a pumpkin pie in the car counts toward its 2 hours. For a long drive, carry it cold in a cooler. Bringing a dish to a potluck covers how to pack food so it arrives at the right temperature. The rest of the week, oven by oven, is in the first-time Thanksgiving timing plan.
Keeping the family pie recipe, and the date it was baked
The pie recipe is often on a stained card in someone else’s handwriting, and the day it matters is the day you can’t find it.
Photographing the card instead of typing it is a Premium feature: $4.99 a month, $29.99 a year, or $49.99 once for lifetime access. The steps are in how to scan handwritten recipe cards.
What the app can’t do: it does not know when your pie came out of the oven or how long it sat on the counter, and it does not send a reminder. The expiry date is one you type in yourself, and it shows in the app only when you open it. The fridge and the 2-hour rule do the real work.
Frequently asked questions
Does pumpkin pie need to be refrigerated?
Yes. Homemade pumpkin pie is an egg-and-milk custard, so it belongs in the fridge within 2 hours of baking and keeps there up to 4 days. Store-bought pies sold at room temperature contain preservatives and can wait until they are cut; check the label.
Can pumpkin pie sit out overnight?
No. USDA guidance is to throw away perishable food left at room temperature for more than 2 hours, and a homemade pumpkin pie is perishable. Throw it out.
Does pecan pie need to be refrigerated?
Yes. Pecan pie filling is eggs and syrup baked into a custard, so it follows the same rule as pumpkin pie: refrigerate within 2 hours and eat within 4 days.
Does apple pie need to be refrigerated?
Not right away. A fruit pie made without eggs or dairy can stay covered at room temperature for up to 2 days, then in the fridge for 2 more. Or refrigerate it straight away and it keeps up to 7 days.
How far ahead can I bake pumpkin pie for Thanksgiving?
Up to 4 days in the fridge, so the Monday or Tuesday before Thanksgiving at the earliest, and Wednesday is better. For longer, bake and freeze it for up to 2 months, then thaw it in the fridge.
How do you thaw a frozen pumpkin pie?
In the fridge, not on the counter. Overnight is usually enough for a 9-inch pie.
Your next step, tonight
Look at what is in your fridge and pick the pies that need it: pumpkin, pecan, sweet potato, anything with cream. Clear one shelf for them now, before the turkey arrives. Put the apple pie on the counter list instead, and write down which day each one gets baked.
When the meal is over, the pie is the easy part. The leftover turkey plan covers the rest of the fridge, and if your pie apples came from an orchard, how to store apples after apple picking keeps them crisp until baking day. And if someone is helping with the crust, why raw dough is off-limits, even with no eggs in it.
