How to Double or Halve a Recipe Without Ruining It

The arithmetic is the easy part. Here is everything the multiplier does not touch.

You are standing in the kitchen with the recipe open on your phone, and you have stopped on one line. It serves four and you are cooking for two. Or it serves four and seven people are arriving in ninety minutes. The multiplication is not the problem. The problem is that you have a suspicion, correctly, that you cannot just multiply everything and walk away.

You are right. Most of the ingredient list scales exactly. A handful of things do not, and two of the most important variables are not on the ingredient list at all.

The short answer

Multiply the ingredients. Do not multiply the pan, the cook time, or the seasoning.

Scale proteins, vegetables, liquids and starches straight up or down. Hold back on salt, spices and leavening, then taste and adjust at the end. Change the pan so the food sits at roughly the same depth as the original, and start checking for doneness well before the stated time.

What scales linearly, so just do the maths

These behave themselves. Double them, halve them, and nothing surprising happens:

  • Proteins. Meat, fish, eggs used as a main ingredient rather than a binder, tofu, beans.
  • Vegetables and fruit. Onions, carrots, potatoes, greens, apples.
  • Liquids in soups, stews and braises. Stock, water, wine, coconut milk, passata.
  • Starches. Pasta, rice, couscous, and the flour in a cake or bread.
  • Most fats. Butter and oil in a batter or dough.
  • Sugar in baking. Sugar is structural, not just sweet, so it scales with the flour.

If a recipe is mostly these, doubling is genuinely as simple as it looks. A pot of chilli or a tray bake will take the multiplication without complaint.

What does not scale linearly

This is the part worth reading twice.

Leavening

Baking soda and baking powder are the most common way a doubled cake goes wrong. Double them exactly and the batter can rise fast, over-inflate, and collapse in the middle, often with a faintly soapy or metallic taste. Scale leavening to about three quarters of the multiplied amount and you will be closer. If a recipe calls for one teaspoon of baking powder and you are doubling, use around one and a half teaspoons rather than two.

This cuts the other way too. Halving a cake and halving the baking powder exactly usually works, because under-leavening is a gentler failure than over-leavening. Err low.

Salt

Salt is a matter of perception, not proportion. A doubled pot rarely wants exactly double the salt, partly because you are seasoning a larger mass that you can still stir and taste. Add about three quarters, taste near the end, and correct. You can always add salt. You cannot take it out.

Strong spices, chilli and aromatics

Chilli, cloves, cinnamon, star anise, garlic and anything else with a loud voice compound faster than you expect. Start at three quarters of the multiplied amount and taste. Mild spices used in bulk, such as cumin or paprika in a curry base, are closer to linear.

Thickeners

Cornflour, roux and reduction do not behave predictably across a size change, because thickening depends on how much liquid evaporates, which depends on surface area rather than volume. Scale thickeners to about three quarters and add more at the end if the sauce is loose.

Alcohol and anything you reduce

A doubled pan of wine takes far more than twice as long to cook off, and if you stop early you get a raw, sharp edge. Either give it real extra time or scale the wine back and add stock instead.

Yeast in a long ferment

Doubling a bread dough does not need double the yeast, because yeast multiplies on its own during the rise. Keep the yeast close to the original and give the larger dough a little more time.

The egg problem: how to halve one egg

Crack the egg into a bowl, beat it until the yolk and white are fully combined, then use half by volume or weight. A large egg out of the shell is roughly three tablespoons, or about 50 grams, so half is about one and a half tablespoons, or about 25 grams.

Beating first is the whole trick. An unbeaten egg is not a uniform substance, and spooning out "half" of it gives you mostly white or mostly yolk, which changes how the recipe sets.

The same method covers awkward counts. To take a third of an egg, beat it and use one tablespoon. To halve a recipe calling for three eggs, use one whole egg plus half of a beaten second, and keep the remainder for scrambled eggs the next morning. If you are halving a recipe with a single egg in a large batter, the egg is doing structural work, so measure it rather than rounding to zero or one.

Pan size is the variable people forget

Doubling a recipe and leaving it in the same dish does not give you twice as much of the same thing. It gives you something deeper, and depth changes how heat travels. A doubled brownie batter in the original tin bakes into a raw middle with dry edges, every time.

Think in surface area rather than in tin names. Doubling a recipe means roughly doubling the area, not the length of one side. A 20 centimetre square tin has 400 square centimetres of floor. Doubling it means finding something near 800, which is close to a 20 by 40 centimetre tin, not a 40 by 40 one. A 40 by 40 tin is four times the area, and your batter will be a thin, overcooked sheet.

For most baking, the honest answer is to use two identical tins and bake them side by side. The cake then behaves exactly like the recipe you trust, because it is the same depth, and you skip the guesswork entirely.

Halving has the mirror problem. Half a batter in the full-size tin is too shallow, bakes too quickly and dries out. Step down a tin size or accept a flatter result.

Cook time does not double

This is the single most common mistake, and it goes in a direction people find counter-intuitive. Doubling a recipe does not double the cooking time. Heat has to reach the centre of a larger mass, which takes longer, but nowhere near proportionally. A doubled casserole might need twenty or thirty per cent more time. It does not need twice as long, and giving it twice as long will ruin it.

The reliable approach is to stop using the clock as the authority. Start checking at the original stated time, then check again in short intervals. Go by internal temperature where you have a thermometer, and by the visual and textural cues the recipe describes: a skewer coming out clean, the edges pulling away, the juices running clear.

Halving fails the opposite way. A smaller, shallower quantity cooks faster than the original, sometimes much faster, so start checking noticeably early.

Where doubling really fails: browning and crowding

Scaling up a recipe that depends on browning is the case where the arithmetic actively lies to you. Twice the meat in the same pan does not sear. It releases moisture, the pan temperature drops, and the meat steams grey instead of browning. Twice the vegetables on one tray does the same thing.

The fix is not a bigger pan so much as more batches. Sear in two or three loads and set each aside. Roast on two trays rather than one crowded one, and swap their positions partway through. It takes longer than you would like, and it is the difference between a doubled recipe that tastes like the original and one that does not.
